Instructions
To prepare the rolls: Combine the warm water, 1 tsp sugar, and dry yeast in a medium bowl. Set aside until bubbly and foamy, up to 10 minutes. If the yeast has not bubbled, toss out and try again! In another bowl (or in the bowl of an electric mixer), combine the scalded milk, butter, 1/3 C sugar, and salt. Cool to lukewarm. Add yeast mixture to the milk mixture. Add eggs, orange juice, and orange zest. Beat thoroughly. Add flour in small increments and mix until it feels smooth, elestic and not sticky. Add more flour as needed, being sure to completely incorporate each addition before adding more. Place dough in a greased bowl and allow to rise, covered, in a warm, draft-free area until doubled in bulk (about 1-1 1/2 hours). Punch down, removing all the air within the dough. Divide dough in half, and cut each half into twelve equal pieces. Roll each piece into an 8-inch rope. Tie each into a knot. Arrange about 2 inches apart on a greased baking sheet, or one lined with parchment paper or a Silpat. cover with a lint-free dish towel. Allow to rise until doubled in a warm, draft-free area, about 30 minutes. Bake at 400 degrees for about 10 minutes until lightly browned. Drizzle with glaze while hot. To prepare the orange glaze: Stir all glaze ingredients together until smooth. Add orange juice or more powdered sugar as needed to get a thick frosting. Spread on warm rolls.
Notes
Make ahead tip: Rolls may be made and baked ahead (but not glazed!!) and frozen. Thaw and reheat in a 350 degree oven for 5-7 minutes. Drizzle with glaze while hot, and serve. How to scald milk: Heat milk in the microwave or on top of the stove just until you see small bubbles around the edge of the pan; this means that the milk is just under the boiling point. Be sure to cool the milk to lukewarm before combining with yeast in bread recipes.
