Sweet Potato Maple PieSweet Potato Maple Pie

  • 1 Prepared crust for a 9-inch pie plate
  • 1 Egg white, beaten
  • Filling:
  • 1 1/2 C Mashed sweet potatoes (canned or baked)
  • 3/4 C Golden brown sugar
  • 1/4 C Pure maple syrup
  • 1 C Heavy whipping cream
  • 3 Large Eggs, beaten
  • 1 tsp Pure vanilla extract
  • 3/4 tso Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 1/4 tsp Ground allspice
  • 1/4 tsp Salt

InstructionsInstructions  Preheat oven to 400 degrees. Line the pie plate with the crust and crimp the edges. Brush the crust all over with the beaten egg white. Set aside while preparing the filling. To prepare the filling: Stire together all of the ingredients in a large bowl until smooth and well-combined. Pour into the pie crust and bake in the lower third of the oven for about 45 minutes. To prepare the topping: While the pie is baking combine the butter, cinnamon, brown sugar, honey and maple sugar in a medium saucepan. Heat over medium-high heat and stir until the mixture boils and the sugar is dissolved. Stir in the nuts. after the pie has baked for 45 minutes, spoon the topping over the top of the pie and immediately return to the oven for about 5 more minutes. Remove to a rack and let cool to room temperature, the refrigerate to chill completely. Slice and serve with sweetened whipped cream, if desired.
