Pineapple Glazed Chicken

Ingredients

1 C Pineapple juice
2 Tbsp Brown sugar
1 Tbsp Soy Sauce
1 1/2 tsp Cornstarch
2 Lb Chicken thighs, skinned and boned
Flour for Dusting
1 Tbsp Butter
Salt and Pepper
Nonstick cooking spray

Instructions Whisk together first 4 ingredients until smooth. Salt and pepper chicken and dust evenly with flour. Melt butter in a large nonstick skillet coated with nonstick cooking spray over medium-high heat. Cook chicken 6-8 minutes on each side or until done. Remove mixture and keep warm. Add pineapple juice mixture to skillet and cook, whisking constantly, 1 minute or until thickened and bubbly. Pour over chicken and serve.
